Are you looking for something new and different to serve with the Thanksgiving turkey tomorrow? Here is a favorite from our southern side of the family. It’s a tradition to have this EVERY Thanksgiving and Christmas — and sometimes other holidays too!
Sweet Potato Souffle

3 c. cooked sweet potatoes (we like the light colored ones and we bake them and scoop out the insides)
2 eggs, beaten
2 t. vanilla
1 c. granulated sugar
1/2 c. milk
1/2 c. butter, softened
Mash the potatoes. Add other ingredients and mix well. Place in a sprayed casserole dish.
Topping:
1 c. light brown sugar
1 c. chopped pecans
1/3 c. flour
1/3 c. melted butter
Mix all ingredients together and “crumble” over the top of the sweet potato mixture
Bake at 350 degrees for 30 minutes.
You CAN refrigerate and reheat leftovers, but we never have any!

I took Emrald’s brother’s senior pictures last year and had so much fun! So, I was super excited to get to meet Emrald and take her pictures too! This girl was up for anything, even shooting pictures in the middle of the Esplanade in downtown Chico!

I’ve known Amber for quite some time now, and if you have followed my blog, you have probably noticed a few pictures of her from my prom sessions and her period dress images from Gold Nugget Days. I met Nicole and her dad for the first time this afternoon for a whirlwind photo tour of lower Paradise. Nicole had mentioned that she was looking for some fall color for her pictures, so I’ve been keeping an eye out for places around town that are starting to turn colors. Just the other day, when I was out with Cassidy, we saw a vine covered fence out in the front of the Paradise Gold Nugget Museum. The leaves had turned a crimson red. I knew it was just the place for Nicole!
We tried out a few other spots around town before ending up at the Paradise Rec Center for some natural light photos. Through it all, Nicole’s dad, Bobby, was a real trooper — even helping out as my assistant a few times!

I’ve known Cassidy for most of her life, but it wasn’t until just recently that I realized that she was such an accomplished dancer. She has been taking dance lessons since she was 3 years old, and is just so beautiful and graceful. You wouldn’t believe it when you meet her, but she is only 12. She just has a confidence and ability to express herself of someone much older.
We had a fabulous time together the other day!
